DAY 1 — MONDAY, NOVEMBER 13TH

DAY 2 — TUESDAY, NOVEMBER 14th
9:00 am Registration open – Coffee with vendors
9:30 am Technical Trials Panel from Wine Research Exchange - Michael Attanasi will talk about the WRE and what kind of trials are being done for the 2017 harvest. Then hear from a panel moderated by Michael to talk about a trial from 2016.

10:45 am Chardonnay tasting looking at style and regional differences

12:30 pm Technical Block – hear from Amanda Stewart from Virginia Tech and Eglantine Chaffour from Enartis USA. Dr. Stewart will present recent research results from her lab highlighting the effects of yeast assimilable nitrogen (YAN) and amino acid content of juice on yeast metabolism during fermentation. Complementary findings from collaborative projects with viticulture researchers at VT will also be presented. A brief overview of the broader research and teaching programs at Virginia Tech related to Enology & Fermentation Science will be included. Eglantine will be speaking on two topics: Discussion on different winemaking approaches to manage herbaceous notes and balance green unripe tannins, especially present in Cabernet Franc; and enhancing the aromatic expression and freshness of Chardonnay wines from harvest to bottling : antioxidant protection, juice clarification, yeast choice, yeast nutrition and ageing program can all impact the type and freshness of aromas.
